News from the Farm...

The sun is out, the birds are chirping, and it’s starting to feel like spring! Here at Fat Donkey, we’re ramping up for the growing season. During February, we kept ourselves busy building a tool rack for the field, improving our washpack setup, and getting the greenhouse ready for starts. With the calendar turning to March, it’s time to put seeds to dirt and get things growing. We can’t wait to get started!

Volunteer at FDF!

We’re looking for a few good plant lovers willing to trade a little elbow grease from June to October for a 2025 CSA share! Duties will include weeding, harvest help, plant care, and more. If you’re interested, follow the link below for more info and to submit an application. And if getting your hands dirty sounds like a good time but you’ve got commitment issues, you’re in luck! We’ll be holding periodic educational opportunities throughout the season to build community, talk plants and gardening, and get some hands-on experience at the farm. Welcome to the recipe corner! Fat Donkey loves good food made with healthy ingredients and we're always looking for new ways to prepare our veggies. Keep an eye on the recipe corner for tried and true recipes from our kitchen to yours! Got a great recipe that you'd like to share? Send it our way! This month's entry: sausage potato kale soup. It's always soup season.

**Christie's Sausage Kale Potato Soup**

- 4 slices bacon (diced)

- 1 lb. sausage

- 4 potatoes (cubed)

- 1 onion (diced)

- 4 garlic cloves (minced)

- 4 c chicken broth

- 4 c kale (chopped)

- 1 can coconut milk

- 1 t garlic powder

- 1 t onion powder

- 1 t dried basil

- 1 t paprika

- 1 t crushed red pepper flakes

- 1/4 t ground fennel

- Pinch of oregano and thyme

Brown the sausage and red pepper flakes in a soup pot/dutch oven. Remove and set aside. Add the bacon and cook over medium heat until crisp. Remove and set aside. Add onions and garlic and cook until soft. Add chicken broth and potatoes and boil until potatoes are cooked through. Add coconut milk, sausage, and spices and heat through over medium heat. Add kale and bacon and cook until kale is bright green and soft. Season with salt and pepper to taste. Serve and enjoy!
